I love a bright sunny morning! Up early, coffee in hand, it’s time to tour the garden. Zucchini could use a few more days. Bush beans are growing nicely. Tomatoes are taking over the potted orange tree and several pots of flowers…have to give that some thought. But, now on to breakfast….Chives look so nice, think I’ll cut a few. Pansies are so fresh and pretty, and edible! Now, how to use them….
How about a Sunday Scramble:
Scramble 2 eggs (or or leave out one yolk if you’re watching cholesterol)
Stir in a spoonful of cream cheese
Dice half a small avocado to mix in
Sprinkle with fresh cut chives and embellish with a pansy!
and maybe add a Sunday Morning Smoothie!:
Wash, cut off stems and toss in a blender , whirl away…
1 handful of blueberries
2 celery sticks, diced
4 mini carrots, diced
one small peeled and quartered apple
Add a few tablespoons of water and Enjoy!
